Ingredients
- 12 oz strawberries
- 5 oz pistachio spread
- 7 oz savoiardi (ladyfingers)
- 7 oz mascarpone
- 7 oz whipping cream
- 1.5 tbsp sugar
- lemon juice (from half a lemon)
- 2 oz water
- chopped pistachios
Preparation of the Strawberry and Pistachio Tiramisu
In a large bowl, use electric beaters to whip the mascarpone with the pistachio spread until you obtain a homogeneous mixture.
Gradually add the whipping cream while continuing to mix with the electric beaters until the cream is thick and homogeneous.
Keep it in the refrigerator until ready to use.Wash 5 oz of strawberries, remove the stems and gently dry them with kitchen paper.
Cut them into pieces, place them in a blender with the sugar, lemon juice, and water, and blend until you have a smooth liquid mixture.Take a baking dish measuring approximately 7 x 9 inches.
Dip half of the ladyfingers into the strawberry liquid mixture and place them at the bottom of the dish.
Cover them with half of the mascarpone, cream, and pistachio mixture.Add half of the strawberry slices, make a new layer of ladyfingers soaked in strawberry juice, and finish with the remaining mascarpone, cream, and pistachio mixture and the remaining strawberries.
Sprinkle the surface with some chopped pistachios and let your strawberry and pistachio tiramisu rest in the fridge for at least half an hour before serving.
