Carrot Cake in Air Fryer

Ingredients

  • 9 oz carrots (peeled)
  • 3 eggs
  • 7 oz sugar
  • 2/3 cup vegetable oil
  • 2 1/2 cups all-purpose flour
  • 1/2 cup orange juice
  • orange zest (zest of one orange)
  • 1 packet baking powder
  • powdered sugar (for decoration)

Preparation of the carrot cake in air fryer

  • Chop the peeled carrots into pieces and place them in a blender with the vegetable oil.
    Blend until you have a smooth mixture.

  • In a large bowl, beat the eggs with the sugar using an electric mixer until they are light and fluffy, then add the oil and carrot mixture, orange zest, and orange juice.
    Add the sifted flour and baking powder, mixing until you have a smooth, homogeneous, and relatively liquid batter.

  • Grease a 8-inch diameter cake pan suitable for the air fryer and dust with flour.
    Pour the prepared batter into it and bake in the preheated air fryer at 320°F for forty-five minutes.
    Let your carrot cake cool in the pan before transferring it to a serving plate, dusting it with powdered sugar as desired, and serving it.
