Ingredients

  • 3 zucchini (medium)
  • 6 eggs
  • 4.23 oz scamorza
  • 1.76 oz pecorino (grated, or Parmesan or Grana Padano)
  • extra virgin olive oil
  • salt

How to Prepare the Air Fryer Zucchini Omelette

  • Wash the zucchini, trim them, and grate them using a coarse grater, then squeeze them to remove the excess water and let them drain in a colander.
    Grate the scamorza.

  • In a large bowl, beat the eggs with a pinch of salt.
    Incorporate the grated cheese into the eggs, then add the zucchini and the grated scamorza.
    Grease a pan suitable for your air fryer and pour in the mixture of eggs and zucchini, leveling it.

  • Preheat the air fryer to 340°F, then cook the omelette for twenty minutes.
    Check the cooking with a toothpick, extending it for a few more minutes if necessary.
    Let it cool slightly and serve your air fryer zucchini omelette.
