Easter cookies are delicious shortbread cookies, easy to make and very tasty.
Simple, with themed cutters, decorated as desired with melted chocolate, they are very easy to make even with children and very tasty, perfect for breakfast, snack, for a sweet break or as a gift.

Ingredients for Easter Cookies
- 1 3/4 cups all-purpose flour
- 3/4 cup powdered sugar
- 1/2 cup butter
- 2 egg yolks
- 1 packet vanillin
- 3.5 oz dark chocolate

Preparation of Easter Cookies
In a large bowl, mix the flour, powdered sugar, and vanillin.
Add the softened butter in pieces and knead until you obtain a sandy mixture.
Add the egg yolks and knead firmly until you have a smooth and homogeneous dough.
Form a dough ball, wrap it in plastic wrap, and let it rest in the refrigerator for half an hour.After resting, roll out the dough on a lightly floured work surface with a rolling pin, to a thickness of 1/8 – 3/16 inches.
With Easter-themed cookie cutters, cut out the cookies and place them on a baking tray lined with parchment paper.
Bake them in a convection oven at 350°F for ten minutes.Take them out of the oven and let them cool completely.
Chop the chocolate and melt it in the microwave or a double boiler.
Place it in a pastry bag with a small plain tip and decorate your Easter cookies with the melted chocolate as desired.
Store the cookies in airtight or tin containers.
