The asparagus puff pastry is a tasty spring savory pie, easy to make and very appetizing.
A base of puff pastry, asparagus and little else for a delicious pie perfect for any occasion, such as an appetizer for Easter holidays or to take to the office for lunch or for a picnic or a day trip.

Ingredients
- 1.1 lbs asparagus
- 1 roll puff pastry (rectangular)
- 3.5 oz ricotta
- 1.4 oz Parmesan (grated)
- 1 spring onion
- 1 egg
- 1 egg yolk
- milk
- poppy seeds
- salt
Preparation of the Asparagus Puff Pastry
Clean the spring onion and chop it.
In a small bowl, mix the ricotta with the grated Parmesan, chopped spring onion, egg, and a pinch of salt until creamy.
Clean the asparagus and boil them in salted water for three minutes.
Drain them and set aside.Unroll the puff pastry on the work surface, leaving it on the parchment paper it comes with.
Spread the ricotta mixture in the center of the rectangle, keeping about an inch away from the edges.
Place the asparagus on the filling, then fold the edges of the pastry inward.In a small bowl, beat the egg yolk with a tablespoon of milk and brush it over the edges of the pastry.
Sprinkle the edges with poppy seeds.
Bake in a preheated fan oven at 356°F for thirty minutes.
Remove from the oven and allow your asparagus puff pastry to cool at least slightly before enjoying: it’s also excellent at room temperature.
