Preparation of Baked Pasta with Spinach

  • Rinse the spinach thoroughly under running water, place them in a large pot without drying them, and let them wilt for about ten minutes.
Meanwhile, peel the garlic and let it brown in a pan with a little extra virgin olive oil.

  • Turn off the heat, remove the garlic, chop the spinach, and set them aside.
Cut the smoked scamorza cheese into pieces.
Cook the pasta al dente in plenty of salted boiling water.
Drain and mix it with the spinach, the pieces of scamorza, and two-thirds of the béchamel sauce from the recipe.

  • Transfer everything to a baking dish, top with the remaining béchamel, and a generous sprinkle of grated grana.
Bake in a preheated static oven at 355°F for about fifteen minutes, until the desired golden brown.
Take out of the oven and serve your baked pasta with spinach hot.
