Bandit’s Pasta

Bandit’s pasta is a delicious first course, easy and quick to prepare.

A dish of rustic and peasant origins, with simple ingredients, almost always available in the pantry or refrigerator, which is prepared in a few minutes and is rich in flavor and hearty, perfect for a family lunch or dinner.

Ingredients

  • 11 oz pasta
  • 5 oz sweet pancetta
  • 1 3/4 cups tomato sauce
  • 2 eggs
  • 1 onion
  • grated parmesan cheese
  • extra virgin olive oil
  • salt
  • pepper

Preparation of Bandit’s Pasta

  • Cut the pancetta into cubes.
    Chop the onion.
    In a large pan or wok, heat a splash of extra virgin olive oil and let the onion brown.
    Add the pancetta cubes and let them brown on all sides, then add the tomato sauce and let cook over medium heat for a quarter of an hour, salting, peppering, and stirring occasionally.

  • Meanwhile, cook the pasta al dente in plenty of salted boiling water.
    In a small bowl, beat the eggs with a pinch of salt using a fork, then add 1/2 cup of grated parmesan cheese and beat again until obtaining a smooth cream.
    Drain the pasta, keeping some of its cooking water aside, and add it to the pan with the sauce with the heat off.

  • Stir thoroughly and also add the egg mixture, continuing to stir and adding, if necessary, a bit of the reserved cooking water.
    Serve your bandit’s pasta immediately, adding more ground pepper or grated cheese as desired.
