Braised Fennel and Zucchini

Braised fennel and zucchini are a tasty vegetarian side dish, easy and quick to make.

Delicious and irresistible, it is a perfect side dish to accompany any type of main course, whether meat or fish, and is simple to prepare in a pan.

Ingredients

  • 2 fennel bulbs
  • 2 zucchini
  • 1 onion
  • 3 tablespoons tomato puree
  • 1 clove garlic
  • 1 packet saffron
  • 1.5 tablespoons butter
  • thyme
  • extra virgin olive oil
  • salt
  • pepper

Preparation of Braised Fennel and Zucchini

  • Wash the fennel, remove the core and stalks, keeping some fronds aside, and cut them into not too large wedges.
    Wash the zucchini, dry them, trim them and cut them into sticks.
    Chop the onion.
    Peel the garlic.

  • Heat the butter with two tablespoons of oil in a large pan and let the onion soften over low heat.
    Add the saffron and a bit of thyme, let it flavor for a few minutes, then add the fennel wedges and zucchini sticks.
    Mix, add the tomato puree and the crushed garlic clove, mix again, adjust with salt and pepper, and cover with a lid.

  • Let it cook over low heat for fifteen minutes, stirring often and adding some water if needed.
    Turn off the heat and serve your braised fennel and zucchini finishing them with a little more thyme and the fennel fronds.
