Ingredients
- 3 eggs
- 1 cup sugar
- 1 cup ricotta
- 2 cups flour
- 1/2 cup chocolate chips
- 1 packet baking powder
- powdered sugar (for decoration)
Preparation of Sicilian Ricotta Cake
Beat the eggs with the sugar for a long time, until you get a very light and fluffy mixture.
Add the ricotta, continuing to use the beaters.
Stir in the chocolate chips with a spatula.Finally, incorporate the sifted flour and baking powder, always with a spatula and gentle movements so as not to deflate the mixture, until it is smooth and homogeneous.
Butter and flour a cake pan with a diameter of 9.5 inches and pour in the prepared mixture.Bake in a preheated static oven at 350°F for about thirty to thirty-five minutes, testing with a toothpick after the first half hour: if the toothpick comes out dry, the cake is ready.
Remove from the oven, let it cool completely and transfer it to a plate or tray.
Sprinkle your Sicilian ricotta cake with powdered sugar to taste and serve.
