Pasta with Sausage and Peas

Ingredients

  • 11 oz pasta
  • 1.1 lbs sausage
  • 1 cup peas (fresh or frozen)
  • 1/2 cup cooking cream
  • Half glass white wine
  • 1 leek
  • butter
  • Parmesan (grated)
  • extra virgin olive oil
  • salt

Preparation of Pasta with Sausage and Peas

  • Fill a large pot with water for cooking the pasta and bring it to the heat.
    Chop the leek and let it soften in a large pan or wok with two tablespoons of extra virgin olive oil and a knob of butter.
    Cut the sausage into chunks and add it to the leek.

  • Let it brown on all sides, then deglaze with white wine.
    Add the cream, mix well, and turn off the heat.
    At the boiling of the water in the pot, add the peas: if using frozen ones, let them cook for a few minutes to bring the water back to a boil, then add the pasta, if using fresh peas add pasta and peas together.

  • Salt and cook the pasta al dente, drain everything together and pour it into the pan with the sausage.
    Add some grated Parmesan and toss.
    Serve immediately, piping hot, your pasta with sausage and peas.
