Ingredients
- 14 oz penne rigate
- 4 artichokes
- 1 packet saffron
- 1 cup heavy cream
- 1/4 cup white wine
- 1 clove garlic
- extra virgin olive oil
- salt
Preparation of Creamy Pasta with Artichokes and Saffron
Clean the artichokes: cut the stem and the tips. Remove any internal fuzz with a paring knife, then remove the tougher outer leaves and cut the artichokes into wedges.
Peel the garlic clove and sauté it in a large pan, or in a wok, with a drizzle of extra virgin olive oil.Add the artichoke wedges, let them season on all sides and deglaze with the white wine.
Season with salt, add a little water, cover with a lid, and cook over low heat for fifteen minutes.
Meanwhile, cook the pasta in abundant salted boiling water.Mix the saffron with the heavy cream and add everything to the artichoke pan, stirring thoroughly.
Add the pasta, cooked al dente, mix well and turn off the heat.
Serve your creamy pasta with artichokes and saffron immediately.
