Air Fryer Potato Croquettes

Air fryer potato croquettes are a delicious appetizer, side dish, or even main course, incredibly easy to make.

The air fryer makes them crispy and dry on the outside, soft and delicate inside, and ready in no time. Perfect to delight both adults and children on any occasion.

Ingredients

  • 25 oz potatoes
  • 1.41 oz grana cheese (grated)
  • 1.41 oz pecorino cheese (grated)
  • 2 eggs
  • breadcrumbs
  • parsley
  • extra virgin olive oil
  • salt

Preparation of Air Fryer Potato Croquettes

  • Peel the potatoes, cut them into chunks, and place them in a pot.
    Cover them with water and bring the pot to the stove.
    Let them cook for about ten minutes from boiling point, until they are very soft.

  • Drain them and mash them with a potato masher, collecting the puree in a bowl.
    Add the grated cheeses, a bit of chopped parsley, one egg, and a pinch of salt, and mix thoroughly.
    Take portions of the mixture the size of a walnut and shape them into croquettes.

  • Beat the other egg in a small bowl with a pinch of salt and put some breadcrumbs on a plate.
    Pass the croquettes first in the egg, then cover them with breadcrumbs.
    Place them in the air fryer’s basket without overlapping.

  • Cook them at 356°F for eighteen minutes.
    Serve your air fryer potato croquettes piping hot.
