Without butter, it is simple and quick to make, in just half an hour of time between preparation and cooking, and it is perfect for breakfast or snack for the whole family.

Ingredients
- 1 egg
- 3/8 cup sugar
- 1/2 cup plain yogurt
- 1/4 cup vegetable oil
- 1 1/4 cup all-purpose flour
- 1/4 cup potato starch
- Half packet baking powder (8 g)
- lemon zest (grated from one lemon)
- powdered sugar (for decoration)
Preparation of Yogurt Cake in Air Fryer
In a bowl, using electric beaters, beat the egg with the sugar until you have a light and fluffy mixture.
Add the yogurt, without stopping mixing, the grated lemon zest, and the vegetable oil.
Mix in the all-purpose flour, potato starch, and sifted baking powder, incorporating them with a spatula and gently folding from bottom to top.Mix until you obtain a well-homogeneous mixture.
Grease and flour a 8-inch diameter cake pan suitable for air fryer cooking.
Pour the prepared mixture into it.Bake at 320°F in a preheated air fryer, for about twenty-five minutes: do the toothpick test by inserting it into the cake; it should come out dry, otherwise continue cooking for another five minutes.
Remove from the air fryer and let your yogurt cake cool completely in the pan.
When it’s cold, transfer it to a serving plate or tray, sprinkle with powdered sugar and serve.
