Ingredients
Ingredients for a 9/10 inches (22/24 cm) pan
- 1 1/2 cups all-purpose flour
- 3/4 cup granulated sugar
- 5 tbsps butter
- 3 tbsps sunflower oil (or corn oil)
- 3 eggs (medium)
- 3.5 oz 50% dark chocolate
- 2 tbsps unsweetened cocoa powder
- 1 navel orange (medium)
- A few drops orange flavoring
- 1 packet baking powder
- 1 pinch salt
- 3 tbsps orange marmalade (I use a jam)
- 2 tbsps water

Steps
How to prepare the Orange and Chocolate Cake with Jam Glaze
Melt the chocolate in a bain-marie: add some water to the saucepan, place a bowl with the broken chocolate pieces inside (I used chips). Use a large bowl so the water doesn’t touch the bottom of the bowl; the chocolate must melt slowly with the heat. Stir often
Once melted, remove the bowl from the heat, add the butter and mix well with a spatula. Set aside and let it cool before adding to the batter
In the meantime, while the chocolate cools, beat the eggs with the sugar, grated orange zest, and a pinch of salt. You should get a light and frothy mixture
Gradually add the oil and continue to beat the mixture
Add a few drops of orange flavoring, 4/5 are sufficient, but you can vary based on your taste and the intensity you want to achieve. Mix again
Now you can add the melted, now cold, chocolate
Mix with the whisk for a few minutes
Now incorporate the sifted flour and cocoa. Always use the whisk, mixing until you get a smooth batter
Finally, add the sifted baking powder and stir gently with a spatula
Pour the mixture into a 9/10-inch (22/24 cm) greased and floured springform pan. Level the surface and preheat the air fryer at 320°F (160°C) for 2/3 minutes on the bake or air fry setting
Insert the pan and start cooking at 320°F (160°C) for 25/30 minutes. Do not check with a toothpick before 20 minutes have passed
After baking, leave the cake inside with the door slightly open for 5 minutes
Remove the cake from the oven and let it cool completely before removing it from the pan
Prepare the glaze by boiling the marmalade with water, making sure to stir with a whisk, it will take just a few minutes. Let it cool slightly before using it
Distribute the glaze evenly over the entire surface of the cake, including the edges, using a brush
You can decorate it with fresh orange slices for a scenic effect

Baking in the Oven for Orange and Chocolate Cake with Jam Glaze
Preheat and bake at 355°F (180°C) for 30/35 minutes always checking with a toothpick. Do not open the oven before 20 minutes have passed. Leave the cake for 5 minutes with the oven door slightly open before removing it
Storing the Orange and Chocolate Cake with Jam Glaze
The cake keeps well for 3/4 days under a glass dome or on a plate covered with plastic wrap.
Tips and Variations
You can choose the type of chocolate you prefer, dark for a stronger flavor or milk for a sweeter cake.
For an extra touch, add chopped hazelnuts or almonds to the batter or white chocolate chips.
You can replace the oil part with butter, in this case, you will add 4.2 oz (120 g) of total butter to the melted chocolate.
If you want a completely butter-free version replace with 3.4 oz (96 g) of seed oil to be added to the egg and sugar mixture.
If you don’t have jam for the glaze to achieve the same intense flavor I suggest replacing it with a bitter orange marmalade that pairs beautifully with dark chocolate. Jam, compared to marmalade, contains less sugar and a higher percentage of fruit, but if you have homemade orange marmalade it will give a more authentic flavor. Orange marmalade is a classic choice, but you can try it with apricot or berry marmalade for a more personal touch.
As an alternative to the glaze, you can decorate the cake with an orange and sugar syrup or just sprinkle it with powdered sugar.
