Ingredients
- 1.25 cups rice for soups
- 11.29 oz dried lentils
- vegetable broth
- 1 carrot
- 1 stalk celery
- 1 onion
- extra virgin olive oil
- salt
How to make rice and lentils
Soak the lentils in cold water for half an hour.
Chop the onion, carrot, and celery.
Heat a few tablespoons of extra virgin olive oil in a pot, add the prepared chopped vegetables and let them sauté for a minute.Add the drained lentils from soaking and mix them to flavor.
Cover them with hot vegetable broth and let them cook for twenty minutes on low heat.
After this time, add two more ladles of broth and bring back to a boil.Add the rice and cook it with the lentils for another twenty minutes, adding more broth if it dries out too much.
When the rice is cooked, turn off the heat and serve your rice and lentils hot, adding another drizzle of extra virgin olive oil to the serving dishes if desired.
