Eggs, Tomatoes, and Cheese

Ingredients

  • 4 eggs
  • 5.3 oz cherry tomatoes
  • scallion
  • Parmesan cheese (grated)
  • butter
  • extra virgin olive oil
  • salt

Preparation of Eggs, Tomatoes, and Cheese

  • Wash the cherry tomatoes and cut them into wedges.
    In a large pan, melt a knob of butter and add the cherry tomatoes.

  • Cover with a lid and cook for a minute.
    Remove the lid, sprinkle the tomatoes with some grated Parmesan cheese and add the eggs, a bit more grated cheese, and some chopped scallion.

  • Salt, pepper, and cover with the lid.
    Let it cook for another couple of minutes, turn off the heat and immediately serve your eggs, tomatoes, and grated Parmesan cheese.
