Air fryer doughnuts are a light version of the classic fried doughnuts.

In the air fryer, they are cooked without oil and only after cooking, they are brushed with melted butter and covered with sugar! Easy to prepare, they need to rise in two phases for 2 hours and 45 minutes, but the result is amazing, crunchy on the outside, super soft inside, and you won’t miss the fried ones.

Ingredients

  • 4.4 cups all-purpose flour
  • 0.5 cup potato starch
  • 0.3 cup sugar (+ extra for decorating the doughnuts)
  • 1 egg
  • 0.4 cup vegetable oil
  • 0.4 oz fresh yeast
  • 1 cup milk
  • 1 tsp vanilla extract
  • lemon zest (grated)
  • butter (for decorating the doughnuts)

Preparing the Air Fryer Doughnuts

  • Heat the milk in a saucepan until lukewarm.
    Crumble the fresh yeast and let it dissolve in the milk.
    In a large bowl, put the flour and potato starch and mix them.
    Add the 60 g of sugar, the egg, the vegetable oil, the vanilla extract, and the grated lemon zest and mix everything.

  • Add the dissolved yeast to the milk and knead until you obtain a homogeneous mixture, then transfer it to a work surface and continue kneading until your dough is smooth and homogeneous, and form it into a ball.
    Place it in a bowl and make a cross-cut on the surface.
    Seal the bowl with plastic wrap and let the dough rise in a draft-free place until it doubles in size: this will take a couple of hours.

  • At the end of the rising time, roll out the dough on a lightly floured surface to a thickness of 0.3 inches and use a 4-inch cookie cutter to cut out discs, then use a 1-inch cookie cutter to make a hole in the center.
    Knead the scraps again and cut out more doughnuts until all the dough is used.
    Place the doughnuts on squares of parchment paper on a tray, cover them with a clean towel and let them rise for another 45 minutes.

  • At the end of the second rising time, place the doughnuts with the parchment paper underneath in the air fryer basket without overlapping them (depending on the size of your air fryer, you may need to cook four or six at a time).
    Cook at 356°F for about six minutes, until golden brown.
    Melt some butter in a saucepan over low heat and brush it over the surface of the doughnuts, then sprinkle them with sugar.
    Your air fryer doughnuts are ready to be enjoyed.
