Seafood salad is a tasty appetizer or main course made with seafood that is easy to make.

The seafood, usually shellfish, octopus, squid, and small crustaceans, are boiled and then seasoned with oil, lemon juice (or vinegar), and salt. The result is a tasty cold dish, perfect for a summer lunch or dinner, or as an appetizer on festive days or special occasions.

Ingredients

  • 28 oz octopus (already cleaned)
  • 18 oz mussels
  • 2 squid
  • 12 oz shrimp
  • 7 oz Giardiniera
  • 1 clove garlic
  • 1 lemon
  • parsley
  • extra virgin olive oil
  • salt

Preparation of the Seafood Salad

  • Cook the octopus in a pot of boiling water with half a lemon for half an hour, adding salt to taste.
    At the end of the indicated time, let it cool in its own cooking water.
    Meanwhile, clean the mussels by scraping the shells and removing the beard, put them in a pan with the peeled and crushed garlic and some parsley, and cook them covered for a few minutes, until they open. Shell them and set aside.

  • Cook the squid in another pot of boiling water for about ten minutes, remove them with a slotted spoon and cook the shrimp for two or three minutes in the same pot, then drain them, let them cool slightly, and shell them.
    When the octopus and squid are cold, cut them into pieces.

  • Put them in a bowl, add the mussels, shrimp, and Giardiniera, and season everything with the juice of half a lemon, extra virgin olive oil, chopped parsley, and salt, mixing thoroughly.
    Store your seafood salad in the refrigerator.
