Ingredients
- 12 thin fresh pasta sheets
- 14 oz sausage
- 2 cups potatoes
- 5 oz mozzarella cheese
- 1.3 cups béchamel
- chopped rosemary
- parmesan cheese (grated)
- salt
Preparation of Cannelloni with Potatoes and Sausage
Peel the potatoes, cut them into cubes, and place them in a small pot.
Cover them with water, bring the pot to the heat, and let them cook for about ten minutes from the boiling point.
Drain them and mash them with a potato masher, collecting the puree in a bowl.
Adjust the salt and sprinkle with a bit of chopped rosemary.Crumble the sausage and brown it in a non-stick pan on all sides.
Add it to the potato puree along with 1 cup of béchamel and mix thoroughly.
Dice the mozzarella cheese.
Place the fresh pasta sheets on a work surface and put a tablespoon of the sausage and potato mixture and a few mozzarella cubes just above the edge of one of the shorter sides of each rectangle, then roll starting from the filled side of your sheets, to form the cannelloni.Spread two tablespoons of béchamel on the bottom of a baking dish and lay the prepared cannelloni on it.
Cover them with the remaining béchamel, the rest of the mozzarella cubes, and sprinkle everything with grated parmesan cheese.
Bake in a preheated static oven at 375°F for about twenty minutes until the desired degree of browning.
