The instant rising savory panettone is a tasty appetizer for the Christmas holidays, easy and quick to prepare.
A delicious savory pie, but also a fridge-clearer for cold cuts and cheeses, perfect for a buffet or a party, which can be prepared a few days in advance, without rising times and to be baked in the oven or in an air fryer.

Ingredients
- 2 cups all-purpose flour
- 2 eggs
- 1.75 oz Parmesan (grated + extra for sprinkling on the panettone surface)
- 0.6 cup milk
- 3.5 tbsp vegetable oil
- 0.35 oz pecorino (grated)
- 1 packet instant yeast for savory preparations
- 5.3 oz mixed cold cuts
- 5.3 oz scamorza cheese (or another soft cheese (galbanino, asiago, etc.))
- blanched almonds
- salt
Preparation of the Savory Panettone
In a bowl, mix the flour, grated Parmesan, grated pecorino, instant yeast for savory preparations, and a pinch of salt.
In another bowl, beat the eggs and add the milk and vegetable oil.
Make a well in the center of the flour bowl and gradually add the egg mixture, mixing with a fork, hand whisk, or spatula until you obtain a homogeneous mixture.Cut the cold cuts into small pieces and the scamorza (or another soft cheese of your choice) into cubes, and add them to the batter.
Pour everything into a 20 cm (8 inches) diameter buttered and floured mold (or in a low panettone paper mold of the same diameter) and sprinkle the surface of the batter with blanched almonds and a generous dusting of grated Parmesan.Bake in a static oven at 350°F for about forty-five minutes: perform the toothpick test, which should come out dry when inserted into the savory panettone.
Alternatively, you can cook it in an air fryer at 320°F for twenty-five minutes, then increase the temperature to 350°F and cook for an additional five minutes.
Let it cool completely and serve, or store it well wrapped in plastic wrap for up to three days.
