Ingredients
- 12 vol au vent
- 1/2 lb potatoes
- 1 cup carrots
- 1 cup frozen peas
- 1/2 cup mayonnaise
- white wine vinegar
- extra virgin olive oil
- salt
- pepper
- leaves parsley (fresh for garnish)
Preparation of vol au vent with Russian salad
In a small bowl, put a tablespoon of extra virgin olive oil, half a teaspoon of vinegar, a pinch of salt, and a little pepper and create an emulsion by whisking with a fork. Let it rest to enhance the flavor until ready to use.
Peel the potatoes and cut them into small cubes.
Also peel the carrots, cut them into cubes as large as the potato cubes, and set them aside separately from the potatoes.
Bring water to a boil in a pot, lightly salting it.Cook the three types of vegetables (i.e., potatoes, carrots, and peas) separately for five minutes each, removing them with a slotted spoon before adding the next vegetable and then letting them cool.
When they are cold, combine the carrot cubes, potato cubes, and peas in a bowl and season them with the prepared emulsion.
Add the mayonnaise and mix thoroughly.Place the Russian salad thus prepared in a well-sealed container in the refrigerator for at least an hour.
When ready to serve, fill the vol au vent with Russian salad and finish by decorating them with a parsley leaf.
