Air fryer struffoli are a light and irresistible version of classic struffoli.

Air cooking, compared to classic frying, makes them light and delicious, perfect for enjoying this typical Neapolitan Christmas dessert without too much guilt. They are also much easier and quicker to prepare than the classic version.

Ingredients

  • 2 cups all-purpose flour
  • 2 tbsp sugar
  • 2 eggs
  • 3 tbsp anise liqueur (or Strega liqueur)
  • 1 tbsp vegetable oil
  • lemon zest (zest of one lemon)
  • 1 tsp baking powder
  • 6 oz wildflower honey
  • 2 tbsp sugar
  • mixed sprinkles

Preparation of Air Fryer Struffoli

  • In a large bowl, combine the flour, sugar, grated lemon zest, and baking powder.
    Create a well in the center and add the eggs, vegetable oil, and liqueur.
    Knead until the mixture is firm and homogeneous.

  • Roll it out with a rolling pin on a work surface to about 0.5 inches thick.
    Cut one-inch wide strips from the dough, roll them with your hands to form cylinders, and cut them into one-inch pieces.
    Round each piece between your palms to form balls.

  • Arrange the balls on the air fryer basket lined with parchment paper, keeping them slightly apart to allow for expansion during cooking. Depending on the size of your air fryer, two or three batches may be needed.
    Lightly spray the balls with oil and cook at 392°F for six minutes, shaking the basket a couple of times to flip them and ensure even cooking.

  • At the end of the cooking, prepare the coating.
    Pour the honey into a wide pan with the sugar and cook over low heat until well liquid, then add the struffoli and gently stir to coat them on all sides.
    Transfer them to a serving plate and finish your air fryer struffoli with mixed sprinkles and, if desired, candied fruit.
