Ingredients
- 1 1/2 cups rice
- 1 broccoli
- 2 oz speck (in a single slice)
- Half onion
- vegetable broth
- extra virgin olive oil
- butter
- salt
Preparation of Broccoli and Speck Risotto
Clean the broccoli.
Remove the leaves and tough stems and extract the florets. Wash them well under running water and then blanch them for a few minutes in salted boiling water. Drain and set aside.Cut the speck into strips.
Chop the onion.
In a large pan, heat a drizzle of extra virgin olive oil.
Let the onion soften in it, then add the rice and let it toast.Add the speck and cover everything with boiling vegetable broth.
When the rice has reached halfway through its cooking time (as indicated on the rice package), add the broccoli florets and finish cooking the rice, adding a bit more hot broth if necessary.
Once cooking is complete, stir in a knob of butter and mix thoroughly.
Serve immediately, piping hot, your broccoli and speck risotto.
