Potato, sausage, and spinach patties are a tasty, easy, and delightful main course.
Baked in the oven (but you can also fry them), without eggs (though you may add one if you find their texture a bit loose due to the type of ingredients used, particularly the sausage), they are perfect for the whole family, hearty and flavorful.

Ingredients
- 28 oz potatoes
- 10.5 oz sausage
- 7 oz spinach, cooked, boiled
- breadcrumbs
- extra virgin olive oil
- salt
Preparation of Potato, Sausage, and Spinach Patties
Peel the potatoes and cut them into chunks.
Place them in a pot, cover with water, and cook for about ten minutes from the boiling point.
Drain and mash them using a potato masher, collecting the puree in a bowl.
Squeeze the boiled spinach well and chop them with a knife.
Add them to the potatoes.Remove the casing from the sausage, crumble it, and add it to the bowl with the other ingredients along with a pinch of salt, mixing thoroughly until you get a homogeneous mixture. Cover the bowl with plastic wrap and let it rest in the refrigerator for an hour.
After the resting time, pour some breadcrumbs onto a flat plate.
Form small balls of the mixture and roll them in the breadcrumbs to coat them on all sides.
Place the patties on a baking tray lined with parchment paper, drizzle with a little extra virgin olive oil, and bake in a preheated static oven at 356°F for twenty to twenty-five minutes until golden.
Remove from the oven and serve your potato, sausage, and spinach patties.
