Sausage and Potato Casserole

Ingredients

  • 4 cups potatoes
  • 9 oz sausage
  • 4.5 oz mozzarella
  • 2 tbsps Parmesan (grated)
  • 2 eggs
  • extra virgin olive oil
  • salt

Preparation of the Sausage and Potato Casserole

  • Peel the potatoes and cut them into small pieces.
    Place them in a small pot, cover with water, and bring to a boil.
    When boiling, salt and cook for five minutes.

  • Meanwhile, crumble the sausage.
    Heat a drizzle of extra virgin olive oil in a non-stick pan and brown the sausage, turning it on all sides.
    When the potatoes are cooked, drain them and transfer them to a bowl.
    Add the browned sausage and mix thoroughly.

  • Cut the mozzarella into small cubes, and beat the eggs in a small bowl.
    Add the mozzarella cubes and beaten eggs to the potato and sausage mixture, season with salt, and mix thoroughly.
    Pour the mixture into a baking dish, leveling it.
    Sprinkle the surface with grated Parmesan and bake in a preheated static oven at 356°F for about twenty minutes.
    Remove from the oven and serve your sausage and potato casserole.
