The angel cloud cake is a super soft pantry cake, easy and quick to prepare.
A fluffy cake with an almost impalpable and light texture that melts in your mouth, just like a cloud, perfect for any time of the day, from breakfast, to snack, to after a meal, which wins over adults and children at the first taste. Few ingredients, lactose-free, flourless, but with cornstarch or potato starch, therefore also suitable for celiacs, and with a very easy procedure for an incredibly high and delicate cake.

Ingredients
- 3 eggs
- 0.75 cup sugar
- 1.6 cups cornstarch (or potato starch)
- 6 tbsp vegetable oil
- 1 tsp vanilla extract
- 1 packet baking powder (gluten-free for celiacs)
- powdered sugar (for decoration)
Preparation of the Angel Cloud Cake
In a large bowl, beat the eggs with the sugar and the teaspoon of vanilla extract until you obtain a light and fluffy mixture.
Gradually add in the vegetable oil while continuing to mix.Also add the cornstarch (or potato starch) and baking powder, continuing to mix, until you obtain a smooth and homogeneous mixture.
Grease and flour an 18 cm diameter cake pan (or line it with parchment paper) and pour in the prepared mixture.Bake in a preheated oven at 350°F for half an hour, then perform the toothpick test to check if the cake is done: it should come out dry from the center of the cake, otherwise continue baking for a few more minutes until it does.
Remove from the oven and let your angel cloud cake cool completely in the pan before transferring it to a serving plate and dusting it with powdered sugar as desired.
