Ingredients
- 3 eggs
- 3.5 oz sugar
- 2.7 tbsp vegetable oil
- 1 tsp vanilla extract (or the grated zest of one lemon)
- 1.2 cups all-purpose flour
- 1 pinch ground cinnamon
- 1 packet baking powder
- 2 apples
- powdered sugar (for decoration)
Preparation of the Grated Apple Cake
In a large bowl, with electric beaters, beat the eggs with the sugar until you obtain a light and fluffy mixture.
Add the vegetable oil and the teaspoon of vanilla extract, continuing to mix with the electric beaters.
Combine the flour, baking powder, and a pinch of cinnamon, mixing until you have a homogeneous mixture.Peel the apples and grate them with a large-hole grater excluding the core.
Add them to the mixture, incorporating them with a spatula.
Grease and flour a 9-inch diameter cake pan and pour in the prepared mixture.Bake your grated apple cake in a preheated static oven at 350°F for thirty minutes, do the toothpick test which, when inserted into the cake, should come out dry, otherwise prolong the baking for a bit more.
Once baked, remove the cake from the oven and let it cool in the pan before transferring it to a platter or serving dish and decorate as desired with powdered sugar before serving.
