Chicken in potacchio is a tasty meat main course, very easy to prepare.
It is a traditional recipe from Marche, and as such every family jealously guards its own version. What they all share is the slow cooking with few, simple ingredients like garlic, rosemary, and white wine. The result is tender and juicy meat veiled by a cooking sauce made velvety with a little tomato sauce, perfect for Sunday lunch.

Ingredients
- 1 chicken (cut into pieces)
- 5 tablespoons tomato purée
- 1 cup white wine
- 1 clove garlic
- rosemary
- extra virgin olive oil
- salt
Preparation of Chicken in Potacchio
Heat a few tablespoons of extra virgin olive oil in a saucepan.
Add the unpeeled garlic clove and let it infuse.
Add the chicken pieces and brown them on all sides until they are golden.Salt and deglaze with the wine.
Once the alcohol has evaporated, add a sprig of rosemary and the tomato purée, reduce the heat, cover with a lid, and cook on low heat for forty-five minutes, stirring occasionally and adding a little hot water if necessary.Towards the end of the cooking time, check that the cooking sauce has reduced; otherwise, leave the lid slightly ajar (you can rest a spoon on the edge of the pot and place the lid on it to create a vent).
Serve your chicken in potacchio hot.
