Ingredients for Halloween Pumpkin Cookies
- 2 1/2 cups all-purpose flour
- 1/2 cup sugar
- 5 1/4 oz butter
- 1 egg
- 1/2 teaspoon baking powder (2 g)
- 1 pinch cinnamon
- Nutella (or other filling of your choice)

Preparation of Halloween Pumpkin Cookies
In a large bowl, mix the flour, sugar, baking powder, and a pinch of cinnamon.
Add the softened butter in pieces and start kneading, until you get a breadcrumb-like mixture.
Add the egg and knead vigorously until the dough is smooth, homogeneous, and without lumps.Form a loaf, wrap it with some plastic wrap and put it in the refrigerator to rest for thirty minutes.
After this time, take the dough and roll it out on a work surface, with the help of a rolling pin, to a thickness of about 1/5 inch.Cut out your cookies with a pumpkin-shaped cookie cutter, cut out the eyes and mouth on half of them and place them on a baking sheet lined with parchment paper, keeping them slightly apart.
Bake them in a preheated fan oven, at 356°F for twelve minutes, until golden brown.
Remove from the oven and let them cool.
When cool, fill the whole cookies with a little Nutella, cover with the cut-out cookies and press lightly to make them stick.
Your Halloween pumpkin cookies are ready to be enjoyed.
