Rice, Pumpkin, and Potato Soup

Ingredients

  • 7 oz rice
  • 14 oz pumpkin (already cleaned)
  • 12 oz potatoes
  • 1 clove onion
  • vegetable broth
  • parmesan (grated)
  • parsley
  • extra virgin olive oil
  • salt

Preparation of Rice, Pumpkin, and Potato Soup

  • Cut the pumpkin into small cubes.
    Peel the potatoes and cut them into cubes the same size as the pumpkin cubes.
    Chop the onion.

  • In a pot, heat a base of extra virgin olive oil and sauté the onion, then add the pumpkin and potatoes and let them gain flavor for a few minutes, stirring continuously.
    Cover everything with vegetable broth and let it cook for ten minutes, then add the rice and cook it, adding more hot vegetable broth if necessary.

  • When the rice is cooked, add some grated parmesan and stir thoroughly.
    Adjust for salt and turn off the heat.
    Serve your rice, pumpkin, and potato soup piping hot, adding some chopped parsley and more grated cheese if desired.
