Ingredients
- 11 oz mixed pasta
- 3 potatoes
- 1 onion
- 7 oz smoked provola
- grana cheese (grated)
- vegetable broth
- parsley
- extra virgin olive oil
- salt
Preparation of baked pasta and potatoes with provola
Peel the potatoes and cut them into cubes.
Chop the onion.
In a large pot, heat a swirl of extra virgin olive oil and let the onion sauté.Add the potato cubes and let them flavor for a few minutes, then cover them with hot vegetable broth.
Let them cook for about ten minutes, then add the pasta (uncooked).
Add more broth as needed until the pasta is cooked.In the meantime, cut the provola into small cubes.
When the pasta is cooked, turn off the heat and add the smoked provola, stirring thoroughly.
Pour the pot’s contents into a baking dish, level it, and sprinkle with plenty of grated grana cheese.
Bake in a preheated static oven at 350°F for fifteen to twenty minutes, until a golden crust forms.
Remove from the oven and serve your baked pasta and potatoes with provola immediately, sprinkling with fresh parsley as desired.
