Oven-baked potatoes with skin are a tasty rustic side dish, easy to make and irresistible.
The potato skin makes them crispy and delicious, perfect to accompany any type of main course, meat or fish, but also delightful as an appetizer to accompany an aperitif. The trick to getting perfect potatoes, crispy on the outside and soft on the inside, is to let them rest in cold water for at least half an hour to remove some starch and dry them perfectly before cooking.

Ingredients
- 28.22 oz potatoes
- 1 clove garlic
- rosemary
- extra virgin olive oil
- salt
Preparation of Oven-Baked Potatoes with Skin
Wash the potatoes thoroughly under running water, scrubbing them gently to remove any dirt.
Cut them into wedges and place them in a bowl.
Cover them with cold water and let them rest for half an hour.Drain and dry them with a clean tea towel.
Place them in a bowl, season with a bit of extra virgin olive oil, salt, and chopped rosemary and mix thoroughly.
Transfer them to a baking tray lined with parchment paper.Peel the garlic clove, split it in half, and add it to the potatoes.
Bake in a preheated fan oven at 428°F for about thirty to thirty-five minutes, until the desired level of browning is reached.
Remove from the oven and serve your oven-baked potatoes with skin hot.
