The Saint Orfeo apple cake is an Umbrian dessert rich in fruit, easy, and delicious.
Made with apples, one pear, raisins, and a small amount of batter, it has a unique, soft, and moist texture, scented with cinnamon, very tasty, and perfect as a dessert, to be enjoyed warm or lukewarm.

Ingredients
- 5 apples
- 1 pear
- 3 eggs
- 1/2 cup sugar
- 2/3 cup butter
- 3/4 cup all-purpose flour
- 1 cup raisins
- 1 packet baking powder
- milk
- ground cinnamon
Preparation of the Saint Orfeo Apple Cake
Peel the apples and the pear and dice them.
Soak the raisins in hot water (or if you prefer, a bit of rum).
Place a bowl over a pot of almost boiling water and melt the butter in it.Add the flour, a little at a time, stirring to avoid lumps, then the sugar, also gradually and stirring constantly.
Once you have a smooth mixture, remove the bowl from the pot, turn off the heat, and add the eggs to the mixture, one at a time, ensuring each is fully incorporated before adding the next.
Add the drained raisins, the apple and pear cubes, a bit of cinnamon, and the baking powder dissolved in a little warm milk.Mix thoroughly to achieve a homogeneous batter.
Butter and line a 9-inch springform pan with parchment paper and pour in the prepared mixture.
Bake in a preheated static oven at 338°F for one hour.
Remove from the oven, allow to cool slightly, and transfer your Saint Orfeo apple cake onto a serving plate or tray.
Serve warm or lukewarm according to your taste.
