Ingredients
- 2.2 lbs potatoes
- 1.75 oz pecorino (grated)
- extra virgin olive oil
- salt
- pepper
Preparation of Cacio e Pepe Potatoes
Peel the potatoes and cut them into wedges.
Place them in a bowl, cover with cold water, and let them rest for an hour.
After this time, preheat the oven to 392°F (static mode) to warm it up.Drain the potatoes and dry them with a clean towel.
Grease a baking dish with some oil and distribute the potato wedges.
Season with extra virgin olive oil, salt, and pepper.Bake for thirty minutes, then take them out and sprinkle the grated pecorino on top.
Switch the oven to grill mode and bake the cacio e pepe potatoes for another ten minutes.
Remove them from the oven and serve immediately.
