White Chocolate Filled Cookies

White chocolate filled cookies are irresistible stuffed cookies and easy to make.

The filling is prepared with white chocolate and cream and consists of a kind of spreadable cream that fills delicious cookies that melt in your mouth: an explosion of taste for everyone’s palate, young and old alike.

Ingredients

  • 1 2/3 cups all-purpose flour
  • 2/3 cups powdered sugar (plus extra for decorating the cookies)
  • 7 tbsps butter
  • 2 egg yolks
  • 3.5 oz white chocolate
  • 1/4 cups heavy cream (still liquid)

Preparation of White Chocolate Filled Cookies

  • Put the flour and the 2/3 cup of powdered sugar in a bowl and mix them.
    Add the butter cut into pieces and start kneading until you get a crumbly mixture.
    Add the egg yolks and knead firmly until you have a smooth and homogeneous dough. Form a loaf, wrap it in cling film, and let it rest for an hour in the refrigerator.

  • Meanwhile, finely chop the white chocolate, collecting it in a small bowl.
    Heat the cream until it almost boils and pour it over the chocolate, stirring vigorously until you have a smooth and homogeneous cream.
    Cover the bowl with cling film and let it rest in the refrigerator until ready to use.

  • After the dough resting time, roll it out on a lightly floured surface to a thickness of 0.4 inches.
    Cut out cookies with a 2-inch diameter cookie cutter and cut out the center of half of them with a 0.8-inch cutter. Re-knead the scraps and create more cookies in the same way until all the dough is used.

  • Place the cookies on a baking sheet lined with parchment paper and bake them in a preheated oven at 180°C (356°F) for twelve minutes.
    Take them out and let them cool.
    Fill them by spreading the prepared white chocolate cream on the whole cookies, covering them with the “cut-out” cookies, and decorating as desired with powdered sugar.
    White chocolate filled cookies keep for a few days in an airtight container.
