Potato swirls are a delicious appetizer or side dish, easy to make and very tasty.
Simple to prepare and very appetizing, they are perfect for accompanying an aperitif or as a side dish to any type of meat or fish dish.

Ingredients
- 1.1 lbs potatoes
- 1 egg
- 1/2 cup grana (grated)
- 1/4 cup breadcrumbs
- 3.5 oz provola
- parsley (chopped)
- extra virgin olive oil
- salt
Preparation of Potato Swirls
Peel the potatoes, cut them into chunks and put them in a pot.
Cover them with water, bring the pot to the stove and let them cook for about ten minutes from boiling.
In the meantime, thinly slice the provola cheese.Drain the potatoes and mash them using a potato masher into a bowl.
Add the egg, grated cheese, breadcrumbs, chopped parsley, and a pinch of salt, and mix thoroughly.
Place a sheet of parchment paper on a work surface, pour the prepared mixture onto it, and spread it out forming a rectangle.Place the provola cheese on the mixture and, using the underlying parchment paper, roll starting from the longest side to form a sausage shape.
Cut it into slices about 3/4 inch thick, then place the potato swirls you’ve made on a baking tray lined with parchment paper and brush them with a bit of oil.Bake them in a preheated convection oven at 392°F for about twenty minutes, until golden.
Serve immediately, nice and hot.
