Super Quick Stuffed Cookies are irresistible cookies filled with jam, marmalade, or spread according to your taste, easy and fast to make.
A not-so-sweet dough (requiring only ten grams of sugar), without eggs and without butter or lactose, with a filling heart and covered with plenty of powdered sugar for bites that melt in your mouth and are perfect for any occasion: at breakfast with milk, juice, tea, or coffee, for a snack, as a dessert, together, why not?, with a good glass of liqueur. They are prepared in ten minutes, without resting times and then in the oven for fifteen minutes.

Ingredients
- 2 1/4 cups all-purpose flour
- 1/2 cup vegetable oil
- 1/2 cup water (hot)
- 2 tsp baking powder
- 1 packet vanillin
- powdered sugar
- filling of choice (jams, marmalades, spreads according to your taste)
Preparation of Super Quick Stuffed Cookies
In a large bowl, pour the vanillin, 10 g of powdered sugar (only ten grams, it’s not an error, but a not-so-sweet dough because each cookie will be covered with powdered sugar later), the flour and the baking powder, and mix well.
Make a well in the center and add the water and vegetable oil, mixing first with a whisk until the liquids are incorporated, then by hand until you get a soft, homogeneous dough without lumps.Take small portions of dough, form balls by rubbing them between the palms of your hands, and then flatten them.
Fill with a teaspoon of your chosen filling and close the dough over the filling itself, then reshape the balls and place them on a baking tray lined with parchment paper.Bake in a fan oven at 390°F for fifteen minutes.
Remove your Super Quick Stuffed Cookies from the oven, let them cool slightly, and roll them in powdered sugar.
Let them cool completely and serve.
Notes
If using a spread, like Nutella, place it in the refrigerator for about ten minutes before using, to make it thicker when putting it into the cookies, and creamy after baking.
