Penne alla Sciaguratella

Penne alla Sciaguratella is a tasty Neapolitan pasta dish, easy and quick to make.

Its name comes from the word “sciagurato,” usually referring to a person who does not worry about things or themselves, as peculiar as the combination of ingredients is in this recipe, as well as the preparation methods. The result is a dish that is not light, but still very tasty, with ingredients almost always present in the pantry, suitable as a last-minute dinner or lunch for the whole family.

Ingredients

  • 14 oz penne rigate
  • 14 oz canned cherry tomatoes
  • 3/4 cup heavy cream
  • 7 tbsp butter
  • 1 clove garlic
  • 1 chili pepper
  • basil (chopped)
  • extra virgin olive oil
  • salt

Preparation of Penne alla Sciaguratella

  • Bring a pot full of water to the stove for cooking the pasta.
    Peel the garlic clove.
    Heat a little extra virgin olive oil in another pot and let the garlic sauté.

  • Add the canned cherry tomatoes and let them cook over high heat for about ten minutes, then salt and turn off.
    Once it reaches boiling, salt the pasta water and add the pasta.
    In a large pan, or in a wok, melt the butter and add a bit of chopped basil and the chili pepper cut into pieces.

  • Add the drained pasta cooked al dente and let it brown in the melted butter.
    Add the prepared sauce, mix thoroughly, and also add the heavy cream.
    Mix again, turn off, and serve your Penne alla Sciaguratella immediately.
