Ingredients
- 4 tomatoes
- 4 fillets anchovies
- 2 tablespoons salted capers
- 1 clove garlic
- breadcrumbs
- Parmesan cheese (grated)
- chopped parsley
- extra virgin olive oil
- salt
- pepper
Preparation of Provençal Tomatoes
Wash the tomatoes, dry them, cut them in half and remove the pulp and seeds.
Let them rest on a rack with the cut side facing down so they lose some of their water.
Rinse the salted capers under a stream of cold running water, then chop them and collect them in a bowl.Also chop the anchovy fillets and the garlic clove.
Put them in the bowl with three tablespoons of breadcrumbs, three tablespoons of grated Parmesan, one tablespoon of chopped parsley, salt, and pepper, and mix thoroughly.
Line a baking sheet with parchment paper and arrange the tomatoes with the cut side facing up.Stuff them with the prepared mixture, finish with a drizzle of extra virgin olive oil, and put them in the oven, in grill mode at the highest temperature for five minutes.
Remove from the oven and serve your Provençal tomatoes.
