Pasta of the Poor

Pasta of the Poor is a typical first course of the Amalfi Coast based on soaked cod, easy and quick to prepare.

It owes its name to being made with simple but very tasty humble ingredients. It is made with soaked cod, anchovies, walnuts, and little else, making it a perfect dish for any occasion, elegant or informal. Traditionally made with linguine, but you can use your preferred pasta shape, even short.

Ingredients

  • 14 oz linguine (or another pasta shape of your choice)
  • 7 oz cod (already soaked)
  • 1 cup walnuts (shelled)
  • 4 anchovies
  • 2 cloves garlic
  • 1 chili pepper (chopped)
  • parsley
  • extra virgin olive oil
  • salt

Preparation of Pasta of the Poor

  • Bring a pot of water to the boil for the pasta.
    Cut the cod into small pieces.
    Peel the garlic cloves.

  • Break the anchovies into pieces.
    Chop the walnuts.
    In a large pan or wok, heat some extra virgin olive oil and fry the chopped chili pepper and garlic cloves.

  • Add the cod, anchovies, and chopped walnuts and cook over low heat for about ten minutes, stirring occasionally.
    Meanwhile, cook the pasta al dente.

  • Drain and add it to the prepared sauce.
    Mix thoroughly, adding another tablespoon of extra virgin olive oil and chopped parsley if needed.
    Serve your Pasta of the Poor immediately.
