Ingredients

  • 1.1 lbs pork loin (in slices)
  • 12 sun-dried tomatoes in oil
  • 1 oz Parmesan (grated)
  • 1 spring onion
  • extra virgin olive oil
  • salt
  • pepper

Preparation of Pork Loin Rolls with Sun-Dried Tomatoes

  • Drain the tomatoes from the preservation oil and pat them with a bit of kitchen paper.
    Clean the spring onion, chop it, and put it in the blender with the tomatoes and grated cheese.

  • Blend until you get a thick and creamy mixture.
    Place the pork loin slices on a cutting board, cover them with a sheet of parchment paper, and pound them with a meat tenderizer to soften and thin them.

  • Lightly salt them and spread with the prepared cream, then roll them up to form rolls secured with toothpicks.
    Cook them on a hot grill for five minutes on each side.
    Adjust salt and pepper to taste and serve your pork loin rolls with sun-dried tomatoes.
