Omelette Sandwich

The omelette sandwich is the classic sandwich for outings or a quick office lunch, a complete and simple meal.

Like all simple dishes, it hides many pitfalls to prevent the sandwich from “melding” with the omelette, turning into a “mush” while remaining a crispy stuffed sandwich. First of all, you need to choose a bread that doesn’t have too much crumb, and in this sense, ciabattas or michettas are perfect. Another important trick is not to fill the sandwich with the omelette while it’s still hot, but to let it cool completely. Finally, as with any other recipe, it is always important to use high-quality ingredients.

Ingredients

  • 2 rolls (such as ciabatta or michetta)
  • 2 eggs
  • 2 tablespoons Parmesan (grated)
  • 1 tomato (vine-ripened)
  • lettuce
  • extra virgin olive oil
  • salt

Preparation of the Omelette Sandwich

  • In a small bowl, beat the eggs with a pinch of salt until you have a homogeneous mixture.
    Add the grated cheese and mix the mixture.
    Pour a drizzle of extra virgin olive oil into a 6-inch diameter pan.
    Pour half of the prepared mixture into it and cook your omelette for a few minutes on each side.

  • Also cook the other half of the mixture in the same way, then let the omelettes cool well on sheets of kitchen paper without overlapping them.
    Wash the tomato and slice it, then season it with a drizzle of extra virgin olive oil and salt.
    Wash the lettuce and dry it.

  • Cut the rolls in half and toast the inside on a hot grill or griddle (this way the bread won’t absorb moisture and become soggy).
    Assemble each omelette sandwich by placing the lettuce, tomatoes, and finally the omelette on the bread.
    Close them and serve immediately or wrap them tightly in some cling film or aluminum foil for later.
