Ingredients
- 11 oz pasta
- 14 oz green beans
- 10.5 oz potatoes
- 3.5 oz Genoese pesto (click for the homemade recipe)
- extra virgin olive oil
- salt
Preparation of Pasta with Pesto, Green Beans, and Potatoes
Put a large pot of water on the stove.
Wash the green beans and trim them.
Peel the potatoes and cut them into cubes.When the water reaches a boil, add the cubed potatoes and green beans and let them cook for five minutes, then add the pasta and cook everything, adjusting the salt.
When everything is cooked, drain and transfer the pasta with the potatoes and green beans into a large bowl.Add the Genoese pesto and mix thoroughly, adding a bit of extra virgin olive oil if necessary to ensure the dish is not too dry.
Serve your pasta with pesto, green beans, and potatoes.
