Pan-fried Zucchini Rolls

Pan-fried zucchini rolls are a tasty appetizer or main course without meat or fish, easy to make.

A filling of ricotta, cheese, and a few other ingredients, a delicious tomato sauce, and plenty of flavor for a perfect summer dish suitable for any occasion, cooked in a pan and very simple to prepare.

Ingredients

  • 3 zucchini
  • 1 1/4 cups tomato puree
  • 1 cup ricotta
  • 1 egg
  • 1 cup grana cheese (grated)
  • 1 clove garlic
  • parsley
  • extra virgin olive oil
  • salt
  • pepper

Preparation of Pan-fried Zucchini Rolls

  • Wash the zucchini and trim the ends.
    Cut two of them into thin slices along the longer side, the third into pieces.
    Grill the slices on a hot grill for one minute on each side, then season with salt and pepper.

  • In a bowl, mix the ricotta, grated cheese, egg, zucchini pieces, a bit of parsley, and a pinch of salt thoroughly.
    In a large pan, heat a little extra virgin olive oil and brown the peeled garlic clove.
    Add the tomato puree and cook it for about ten minutes to thicken, then salt it.

  • While the sauce is cooking, lay the grilled zucchini slices on a work surface.
    Place a teaspoon of the prepared ricotta mixture at one end of each slice and roll them up to form the rolls.
    Add the zucchini rolls to the pan, sprinkle them with a bit more grated cheese if desired, and cook them for about ten minutes over high heat.
    Serve immediately, hot.
