Surimi and Shrimp Salad

The surimi and shrimp salad is a fresh summer salad, easy to make and very tasty.

Perfect for an outdoor lunch or dinner, on the terrace or in the garden, perhaps with friends, or to prepare in advance for lunch at the office or to take to the beach, it is simple to make and full of flavor.

Ingredients

  • 7 oz shrimps
  • 3.5 oz surimi
  • 10 cherry tomatoes
  • 1 carrot
  • 1 stalk celery
  • lemon juice
  • extra virgin olive oil
  • salt

Preparation of the Surimi and Shrimp Salad

  • Clean the shrimp and boil them in boiling water for five minutes, then drain them and let them cool.
    Cut the surimi into slices and place it in a bowl.

  • Peel the carrot and cut it into pieces, wash the celery and also cut it into pieces.
    Wash the cherry tomatoes and cut them into wedges

  • Add all the vegetables to the surimi along with the shrimp and season with extra virgin olive oil, lemon juice, and salt, mixing thoroughly.
    Let your surimi and shrimp salad rest in the refrigerator for at least half an hour before serving, adding a few slices of lemon if desired.
