Zucchini and Bacon Bruschetta

Zucchini and bacon bruschetta are delightful summer finger food appetizers, easy and quick to make.

With a grill pan and a lid, you can prepare delicious bruschetta cooked only on the stovetop, without an oven, topped with mozzarella, sliced bacon, and tender zucchini, perfect to accompany aperitifs and as a summer appetizer, for an apericena or a dinner on the terrace or in the garden, alone or with company.

Ingredients

  • 3 slices rustic bread
  • 1 zucchini
  • 3.5 oz mozzarella
  • 1.75 oz bacon (slab) (in slices)
  • extra virgin olive oil
  • salt
  • pepper

Preparation of Zucchini and Bacon Bruschetta

  • Wash the zucchini and slice it into thin rounds.
    Heat a drizzle of extra virgin olive oil in a large pan, add the zucchini slices, and let them cook for about ten minutes.

  • Add salt, pepper, and set aside.
    Drain the mozzarella from its storage whey and cut it into thin slices.
    Cut the bread slices in half and toast them on a very hot grill pan on one side.

  • Flip them over and top with mozzarella, bacon, and zucchini slices, cover the grill pan with a lid and let cook a few minutes to melt the mozzarella.
    Serve your zucchini and bacon bruschetta immediately.
