Sweet and sour cucumbers are a tasty preserve that is easy to prepare.
Sliced cucumbers flavored and immersed in a sweet and sour solution that makes them crispy and flavorful, perfect for adding to salads, sandwiches, or enhancing a vegetable buffet.

Ingredients
For two 8 oz jars
- 1.1 lbs cucumbers
- 2.1 cups water
- 2.1 cups white wine vinegar (or apple cider vinegar)
- 1 chili pepper
- 2 cloves garlic
- 2 leaves bay leaf
- whole black pepper
- coarse salt
- sugar
Preparation of Sweet and Sour Cucumbers
Wash the cucumbers thoroughly, dry them and slice them.
Place them in a colander with two tablespoons of coarse salt, mix and let them drain their water, pressing them with a weight, for about ten minutes.After this time, gently squeeze them, rinse them under running water, and dry them.
In a large pot, pour the water, white wine vinegar, two tablespoons of coarse salt, two tablespoons of sugar, and bring everything to a boil.
Peel the garlic cloves and slice them thinly. Also, chop the chili pepper.Distribute the cucumbers in two sterilized jars by arranging them in alternating layers with a few slices of garlic, some whole black pepper, and a bit of chili pepper, and finish with a bay leaf.
When the mixture in the pot comes to a boil, let it boil for a few minutes, then pour the mixture obtained still hot into the jars with the cucumbers.
Close the jars with their lids and let them cool inverted until a vacuum is formed.Once cold, store them in a cool, dry place, away from heat sources.
Let your sweet and sour cucumbers rest for at least a week before enjoying them.
Once the jar is opened, store it in the refrigerator and consume it within a few days.
