Greek Green Bean Salad

The Greek green bean salad is a tasty cold summer dish, easy to make and full of flavor.

Green beans are low-calorie legumes, though they have nutritional characteristics similar to a vegetable, containing provitamin A, vitamin C, and K, and B vitamins. They are rich in minerals and fiber and low in protein.

A fresh salad made with green beans and dressed like Greek salad, with feta, cherry tomatoes, black olives, etc. Tasty and satisfying, perfect to prepare in advance for the hottest days of summer, for lunch or dinner, or even to take to the beach, or to the office for a lunch break.

Ingredients

  • 1.32 lbs green beans
  • 1.1 lbs cherry tomatoes
  • 0.88 lbs feta cheese
  • 1 red onion
  • 2 cucumbers
  • 2.82 oz black olives
  • oregano
  • extra virgin olive oil
  • salt

Preparation of Greek Green Bean Salad

  • Wash the green beans and trim them.
    Boil them in salted water for fifteen minutes, drain and let them cool.
    Wash the cherry tomatoes and cut them in half.

  • Clean the onion and slice it thinly.
    Peel the cucumbers and cut them into thin slices.
    Cube the feta cheese.

  • Put the green beans, tomatoes, cucumbers, and onion in a large bowl.
    Add the black olives and season everything with oregano, extra virgin olive oil, and salt, and mix thoroughly.
    Add the feta and mix gently to avoid breaking it.
    Serve your Greek green bean salad.
