This recipe is for preparing quails roasted in a pot, but if you prefer, you can also bake them in the oven at 350°F for about half an hour. However, if you prepare them like this, in the pan, they turn out softer, less dry. The sauce is particularly tasty and flavorful, so they’re also excellent for accompanying a steaming plate of polenta, or if you prefer, even mashed potatoes. Choose based on your taste; I love them with risotto!
