Ingredients
- 4 bell peppers
- 1.76 oz breadcrumbs
- 1.41 oz pecorino (grated)
- 15 black olives (pitted)
- 1 tbsp capers
- 2 cloves garlic
- 1 chili pepper (optional)
- parsley
- extra virgin olive oil
- salt
Preparation of Carrettiera Style Peppers
Wash the peppers, remove the stem, seeds, and filaments, and cut them into strips.
Peel the garlic cloves.
Clean a bunch of parsley with damp kitchen paper and chop it.Pour a little extra virgin olive oil into a large pan.
Let the garlic cloves and chopped chili pepper brown, then add the bell peppers.
Sprinkle them with some chopped parsley, adjust the salt, and let them cook over low heat for about ten minutes, stirring often and adding some hot water if the cooking base dries out.Remove the garlic cloves, add the capers and pitted black olives and let them cook until the peppers soften.
Meanwhile, in a bowl, put the breadcrumbs, grated cheese, the rest of the chopped parsley, a tablespoon of extra virgin olive oil, and a pinch of salt and mix thoroughly until you get a homogeneous mixture.
Toast the obtained mixture for a few minutes in a non-stick pan, then add it to the pan with the peppers and mix.
Serve your carrettiera style peppers.
